Mila is probably my favorite of these, although Mila Moss is very M-heavy (reminds me of Mickey/Minnie Mouse, KWIM?). I also like Shea/Shay, but wanted to point out that "Shay Moss" -- or Mila/Gabriella "Shay Moss" -- sounds very much like Seamus (SHAY-mus).
Camryn Amanda Moss is even more M-ey, but it doesn't have the Mickey Mouse problem since M isn't the beginning sound (still, if you really like Camryn Moss I'd try to use a mn that doesn't also have a prominent M sound).
Therefore, Gabrielle Moss probably sounds the best, although it's incredibly popular/commen in my area. If you love it, you love it, though. ;) I'd pair it with something else.

Camryn Amanda Moss - This has an okay flow, even though it is a bit "m" heavy, but Camryn is so trendy and I really don't suggest using it.
Mila Shay Moss - Mila Moss sounds way too sing-songey.
Gabrielle Shay Moss - This easily has the best flow and GMV
Shay Amanda Moss - Shay Moss... just repeat that over a few times and you will see that the flow isn't that great.
I think for most of these names, the flow just doesn't work. As much as I do like Shae (preer this spelling) Shay Moss does not sound good. It is very choppy. Try repeating the names over a few times WITHOUT the mn's as that is what will be said most often and you will see what I mean.

Moss is a difficult last name to work with... it is better if you avoid names with begin or end with an M (or have a very prominent M sound), 1 syllable names (too choppy), and any time of colour or word name, as Moss is a word name.
