Jackson, easily, because it is a traditional surname meaning "son of Jack," while Jaxon is simply a trendy misspelling of it. (Not trying to sound mean, but you asked why! LOL) ;)

I voted for Jackson, although I don't have a reason why, except that it just looks nicer to me.
