I agree that Addison is popular and trendy right now. And, I don't think the -son ending flows as well with Austin.
Would you consider Marin/Maren for a girl? We are thinking of using that if we have a girl... It's different but not too trendy or weird. Not sure of the -in ending with Austin though. I like Jillian too, but again, it depends on your feelings about the "in" sound at the end of both names.
Boy list sounds good. I like the meaning behind Craig, and it's a nice balance of "heard of it" yet not overused. Would be a good middle name if you decide not to use it for a first name.

I have a few observations:
Boys:
Eli (no middle name selected yet) - The -i at the end is a wee-bit awkward running into Austin.
Everett (no middle name selected yet) - I love it! A great name, that is still quite unexpected. Sounds good with your last name. I'm REALLY not a proponent of calling a child by his/her mn, but I LOVE the sound of Walter Everett Austin. It's a great combo to name a child one name that you love and one name that has family roots!
Wyatt Xavier (I can't drop wyatt... I just really like it) - Not very good flow, sorry. Wyatt is a great name, though. Look for a diffent mn and you might have a winner. Wyatt Austin---ahhh!
Walter (walt for short, my Dad's name is Walter and he goes by Wally)- I love it, but there is a problem. It's not great with your last name, either in full or the nn.
It would work better if he weren't called by it so that it's not always Walter Austin.
Girls:
only one name I have found that I LOVE: Addison Michelle--- That's the winning criteria! Why should I tamper with that? Does your dh love it too?
