I love Reese. Personally, I prefer it as a nickname for Theresa though - I think it's nice for her to have a formal name for resumes and other professional/adult things. Also that gives her other options if she dislikes Reese later in life. I think it's nice for kids to have other choice. Also, I think it's easier to find a middle name that flows with Theresa.
As for middle names, if you go with Reese, I think you need a longer (at least 2, preferably 3+) syllable name to help balance a short first name, otherwise it sounds too choppy. Also, since Reese is unisex and slightly trendy, I'd pair it with something more classic and traditional. (You don't have to go super traditional, I'd just avoid another trendy, unisex name)
A few options:
Reese Amelia
Reese Charlotte
Reese Caroline
Reese Catherine
Reese Julia
Reese Lydia
Reese Linnea
Reese Madeline
Reese Margaret
Reese Natalie
Reese Olivia
Reese Sophie/Sophia
Reese Talia
Reese Victoria
Thanks to the Reese Witherspoon, this name is becoming very popular for girls, so if that would bother you, than stay away from it. I, however, do not know of any girls with this name, just boys.
I think out of your choices, Reese Taylor would be too confusing for people, trying to figure out if it was a boy or girl, since both are unisex names. Out of your other choices, my favorites are Reese Paige and Reese Kaylie.
