Wow...thanks everyone for all the suggestions...here are the ones I like the best so far. I haven't run them by dh yet so I may be back with an even shorter list (lol). I forgot to mention in the original post that we want a simple, classic, easy to spell and pronounce name (my name was ALWAYS mispelled...common name "new" spelling, my dh's name is uncommon & is misprounced and misspelled alot. Therefore, we're pretty big on keeping it simple...but not too popular!!
My picks so far are:
Girls:
Anne (loved reading Anne of Green Gables) nn Annie when she's little
Jane
Eleanor (my ALL TIME favorite character is Eleanor in Jane Austen's Sense and Sensibility)
nn Ellie when she's little
Bethany (sorta like it)
Libby (love this one!! but dh dosen't...Faith's baby doll is named Libby!
Selah (this is my favorite so far)
Boys:
Griffin/Finn (kinda unique)
Peter
Caleb
Isaac
Luke
Calvin
Nolan
Aaron
Thanks again, Any other suggestions or "votes" for what I've narrowed down???

I'm out of suggestions, but here are my thoughts:
Girls:
Anne- Anne seems a bit boring to me, but I love nn Annie and I love the connection to Anne of Green Gables. I think I prefer Annabel or Annelise though
Jane- Beautiful, I find this so sweet and spunky, even though its a classic
Eleanor - Ellie is a popular nn, I prefer Nora, but I love the connection the book, this makes a great choice and I think it is my fave with Faith
Bethany - Like this a lot, has the seem feel that Faith does
Libby - Seems too nicknamey. I prefer Elizabeth nn Libby
Selah- Is this like see-luh or sell-uh. Sorry, I'm not great with pronunciations... so I think if you're going for something simple, this isn't it
My fave is Eleanor with Bethany 2nd.
Boys:
Griffin/Finn- Love this, I have been suggesting it a lot. Don't know that it goes well with Faith though
Peter- okay, has always seemed weak to me
Caleb- Like it, doesn't go well with Faith though
Isaac- LOVE this for you
Luke- LOVE this one too
Calvin- I really like Calvin, especially with nn Cal
Nolan- Love this and love the way it goes with Faith
Aaron- This goes really nicely with Faith
I would eliminate Peter and Caleb, but I love all the others on your list. I think my fave is... hmm... probably Isaac.

You can't go wrong with Anne or Jane; both are classic, sophisticated, elegant, and feminine. Anne of Green Gables was also a favorite of mine. If you're naming her after Sense & Sensibility, then you should name her Elinor, since that's the character's name. She is also the reason that I love Elinor as much as I do. It's one of my favorites, and definitely my pick out of all your girl names, even though I really like all of them. We seem to share a love of literature...Little Women is the reason that I adore the name Meg.
Libby is nice, but I prefer Elizabeth, nn Libby, just to give her more possibilities as she grows up. Another one I like is Libba. I've met one Libba and loved it ever since. It's a bit different and refreshing somehow. Lila is also very nice.
Bethany is nice with Faith, though not my favorite. I prefer Sela over Selah, but that's just spelling preference. The name is very soft and flowy...I love it.
For boys, Griffin, Luke, and Isaac are my favorites. I like them equally, so I'm not sure which one I'd vote for. I guess it depends on what middle names you're considering. I also really like Calvin. Peter is the only one that doesn't appeal to me at all (and that's just because a little cousin of mine refers to a very private part of his body as "my peter"...little boys...what can you do?).
