Our baby girl is due in 3 weeks and we finally *think* we've decided on Macy Gracelyn.

I say keep Macy, drop Gracelyn. The repetition of the "ace" sounds causes a really bad flow, and Gracelyn just seems trendy and madeup anyways. Macy is cute!
ETA Plus, it sounds a lot like Macy Gray http://en.wikipedia.org/wiki/Macy_Gray
I think it's cute.
I agree with other posters - you don't want that duplication of the ace sound - in fact I think you need to have a middle without a Long A - I think you should do without an S-or soft-C sound in the middle too - that sound in Macy is way too prominent for it to be repeated in the middle name - because I'm really picky, I don't like any that start with a vowel either with Macy ending in that long-E sound - definitely none that start with S either
how about:
Macy Brielle
Macy Brianne or Brianna
Macy Corinne
Macy Catherine
Macy Carina
Macy Dawn
Macy Gemma
Macy Joelle
Macy Janna
Macy Jenna
Macy Jillian
Macy Kathleen
Macy Lynelle (in case you had the Lyn at the end of Gracelyn for some reason)
Macy Nicole
Macy Noelle
Macy Piper
Macy Rhiannon
Macy Taleen (or you could try Talynn here if you need that lyn sound for some reason)
