I always stuff my turkey. I know it takes longer to cook that way, and I'm ok with that. I have to get up eariler, and that's ok, too. I stuff the morning of, never the night before. I don't even prepare my stuffing in advance, I make it and stuff it! I ALWAYS check the temp of the stuffing, too. If it's not hot enough, then my bird isn't done all the way through.

My dad (who was the cook of the house) never stuffed the bird for the very same reason as the article. and I just continued with the tradition.

I used to drain my potatoes by holding the lid onto the pan and pouring out the excess water.
