freezing stuffed peppers?

I have a ton of green bell peppers that I need to do something with...I bought 8 at Aldi's this weekend, then found out we were getting them in our produce co-op baskets this week. So now I think I have about 16. More than we will eat before they go bad. I'd like to make stuffed peppers and freeze them but I am not sure how they will turn out. I know peppers tend to get mushy when frozen..so would this even work at all? And if so at what point do I freeze them? Before or after baking (assuming before)?
I'd appreciate any tips and tricks from anyone who's BTDT.
