How do you cook flounder?

Dh bought some frozen flounder fillets a few weeks ago, and I am not sure how to fix them. He baked some a little too long, and they turned into fish paste :-P

I have had good results cooking firmer fish, love cajun catfish, blackened catfish etc but how do you cook flounder?

I don't want fish paste again. :-D

I've only had flounder at a restaurant in New Orleans, but since it is a delicate, thin filet, I would cook it in any manner I would cook sole or sand dabs (i.e. very short cooking time in a stovetop skillet).


I'm also not too sure about how freezing would effect the texture.

The last time we had flounder a couple weeks back. I put lemon juice melted butter and a sprinkle of Old Bay's seasoning.

Thanks for the suggestions! I tried cooking the flounder again last night, and it wasn't quite fish paste but still not very good. We ate it, but I am not buying any more frozen flounder for a LONG time. ;-)

I am trying to incorporate more fish into our diet, but since we live over 6 hours from the ocean, fish is more expensive here.

I would say don't give up on frozen fish, but maybe try a different type.

I can cook tilapia so that it is at least edible so I will try that again next time. Love fresh caught mountain trout so maybe we will try fishing this summer when we camp. And maybe I can talk dh into taking me back to the Chesapeake bay area ...crab cakes, clam fritters ...mmmm!
