I was thinking of all the ideas of meals to with Thanksgiving leftovers.

We were at a relative's and they sent us home with leftover prime rib, which was fine because the turkey was smoked.


I've used some of it for sandwiches for DS's lunch, served some with mashed potatoes and gravy for dinner, and the last of it has been cubed to go into some little pot pies.

I always make a casserole and pop it in the freezer. I pull every last scrap of meat off the bone and throw it in a casserole dish, then I throw in left over mashed potatoes, some stuffing and lots of gravy. I'll heat and eat one night in January when I don't have time to make a dinner.


But I still have gravy left over (long story short, I made about 2 gallons of gravy this year! LOL) so this was a good reminder to get it in the freezer so I can make pot pies. I've always wanted to, so I think I will. We had a turkey misunderstanding this year and my oldest ds ended up bringing a half thawed turkey over when my bird was over half way done. I cooked it a few days later, so there is lots of left over turkey in the freezer from that now. So pot pies, here I come! LOL Next week, after finals....

I think I did good on my turkey now that I look at it.
