blood allergy results from DAN! doctor

We met with the allergist/DAN! doctor this morning to go over Aidan's blood panel (still haven't been able to get the urine, stool or hair samples). I'm still in a little shock. I really don't know what we're going to feed him. He's allergic to a ton of stuff. They divided it into three groups. Those with three stars were the most severe, then two, then one. So we're supposed to get him off the 3-star ones first and so on.

3 stars:
gluten (no big surprise)
milk (again, no surprise)
peanuts (surprised)
soybeans
wheat
yogurt.
There were a lot of grains that only showed up as one stars, but because of they contain gluten, they have to be considered 3-stars; same with cheeses due to milk. Oddly, yeast didn't show as a trigger even though it was a top-tier one on the skin test - but he still has to avoid it. Same with mushrooms - makes me wonder if those are more tied to his mold allergies.

2 stars:
coconut
peas

1 stars:
lima beans
blueberries
cashews
corn
eggs
mustard
nutrasweet
rye
sesame
walnuts
watermelon

Yikes!! The soy allergy is going to cause some problems since that's what all the non-dairy butters and fake cheese are made from. So I have no idea how we'll be able to bake anything for him. I can get fake eggs, but I don't know of any butter substitutes that don't have soy or milk. Does anybody here know of any butter-subs that are both casein and soy free????

They also did some in-depth blood analysis on him. he's slightly hypoglycemic and he has a slight hypothryroid problem. He's low on saturated fats and a little high on Omega 3s. There were other issues that showed up but he said pretty much all of them are likely to correct once we get his diet under control. He recommended

Thank you, everyone, for your support and pep talks! I can't tell you how much I appreciate it. We don't know anyone else with kids with special needs of any kind, other than my cousin's son with a severe peanut allergy, but that's not really the same.
