What I read and followed is the elimination diet, which is also the full Feingold diet. We did this when ds was 3 and we did see immediate results, less fogey, more focused and way less tantrumming. We stuck with the diet rigidly for a few months, then one by one added things back and watched for changes. the only changes we saw were when he ate wheat and milk products.
Ds is now 10 and we now do let him eat pizza once or 2x a week, also whole grain wheat bread. We give him digestive enzymes along with those foods, and he seems just fine. Ds never had extreme gastro problems. We do also give him extra fibre, and lots of supplements like complete omegas, extra calcium, magnesium and zinc, a great children's multivitamin, probiotic and he regularly takes baths in epsom salts.
We had no trouble with our ds feeling deprived when he was little, but pizza is still and was always his very favorite food, and we are happy to now have a way he can eat it again!
We have been doing the gluten-free, casein-free diet for about 3 years, and in our case, it has helped.
