I've been researching this as well, but planning to wait a bit before starting.

Hey! I noticed that you mentioned going casein-free first then slowly working up to gluten-free. I was just wondering if there is a particular reason for this? I was just curious cuz we are considering doing a gfcf diet with my ds and I was worried about the casein thing cuz he LOVES his milk and cheese! He doesn't really eat ALOT of breads and NO pastas, so I think it will be harder for him to adjust to the casein-free. So I was just wanting to know if there is a SET way of doing this so I don't mess it up with him.
Hey! I'm just noticing that goblins have been eating my posts here, I KNOW I posted a reply earlier to this thread... aaaaaugh.
Anyways, it is not a problem to take out either one first when eliminating, it's just that most people just find it easier to take out the casein because there are so many yummy casein replacements in rice and soy, other ways of getting calcium, etc. My ds loves Very Vanilla Soy Milk by Silk, tastes like Vanilla ice cream and all his friends drink it up whenever they are over here, I have to keep running to the store!!!
We did the Feingold elimination diet when ds was very young (and couldn't do nearly as effective objecting as he can NOW lol) and he seemed so much less foggy and more connected. he never had gastro problems, so as we added back food slowly, we watched to see when he seemed foggy again. We ended up keeping away wheat and milk products based on his behavior... and even now if he gets too much wheat and dairy products without digestive enzymes for several days in a row (read: birthday parties, pizza, cake), he seems more irritable. He also got gassy sometimes, but now we give also him extra fibre, plenty of water and a probiotic every day and that is not a problem.
Again, another plug for Katherine's blog as she really covers the breads stuff. It is challenging in this wheat world, but if your child is suffering, you will find it worth it all, I think.
