I just talked to my son's teacher and she casually mentioned the school pychologist may be contacting us about a 504 Plan. Ok, what is the big difference between this and a IEP? What I am seeing on line is that 504 Plans are typically written for kids with less serious conditions (food allergies, ADD and etc). Also, it seems like a 504 Plan doesn't allot you any special service like speech ot and so forth.

that sounds about right. If your child needs special instuction or OT, PT, SLP then they need an IEP. Everything that goes on a 504 plan goes into an IEP.
