OK, I like food, and I can't belive I'm thinking of this at 7 am, but I hate planning for dinner.

um well, most of my favorites are italian. All kinds of varieties of italian food but mostly I like to cook fresh and light.

A really quick favorite here is pasta with dreaded tomatoes but I can tell you a non-tomato version too. But basically I either chop fresh tomotoes or get a can of chopped tomatoes. I brown garlic in a olive oil, add tomatoes and fresh basil and let it simmer. Then I toss it over pasta, add cheese and viola. Dinner! For a variety you can add clams, other veggies, pieces of chicken or let it all cool and make it a pasta salad.

Serve with bagettes and dipping sauce (balsamic vinegar, olive oil and basil. Mike (10yo) can teach you) and a salad with homemade dressing. My dressing is basically balsamic vinegar, olive oil, garlic and italian seasoning.

You can also do the same without the tomatoes (brown garlic in oil and add seasoning, veggies, chicken, shrimp, whatever) and a little extra liquid like either a cooking wine or chicken broth and toss it over pasta. If you choose shrimp, do them last and only for a minute so they don't get tough.

If you don't have fresh basil or other fresh herbs, dried italian seasoning is a good substitute.

For the reflux, your dh should start taking digestive enzymes with each meal. It will help alot. Problem with acid reflux is usually your digestive system is completely out of balance, then we keep adding more antacids which though it adds immediate relief it puts the body more out of balance. Do a search for brenda watson hope formula. She is often on PBS and speaks about alot of these issues better than I can.

Hi Maria,

Well, I am a Lacto/Ova vegetarian, so I cook a lot with tofu. One of my favorite recipes came from the mom of one of the paraprofessionals I used to work with, who is Cuban-American. Croquettes are a big party food and she missed them (because they were often made with ham). Anyway, your kids might eat them if you don't tell them what you put in them because they are finger food!

Tofu Croquettes a la Lilly (my para's mom's name)

1/2 block of firm tofu (mashed)
1 egg
1/2 to 1 cup italian bread crumbs
1/2 t onion powder (or real onions to taste)
1/2 t garlic powder (or real garlic to taste)
1/2 t dried oregano
2 heaping t flour dissolved in water

Combine all ingredients well and shape into croquettes (Cuban croquettes are sort of shaped like your thumb) and fry (using cooking spray or oil) in a skillet until golden brown.

You can also add different ingredients like cheese, grated veggies, or spinach.

I usually have them with a salad and I am a happy camper. :)

MY dh's grilled steaks and his roasts are the best. He is such a good cook! And doesn't mind doing half of the cooking. What a guy!
