Yes, he did finally chew - more and more. As your screenname says, it took baby steps. At one point, in order to get him to try new textures, I was actually peeling grapes!

I am assuming this is to encourage him to drink by mouth. Its a bit of tough love with a light at the end of the tunnel. It is similar to how one of my students who was on pureed foods was encouraged to chew. His parents had to make his food chunkier and chunkier as time went on. However, this smart little cookie would just spit out the chunks. eventually, since he was getting less food, he got hungry enough to chew. It is hard, but, as you said, hopefully it will work.
