I made chicken soup, meatloaf, and pasta sauce. I know I did more then that, but can't remember what right now.
The meatloaf was good. I just premixed the meat, shaped it, then froze it in a freezer bag. When I was ready to make it, I took it out and let it defrost before cooking. It was yummy. My favorite was the chicken soup though. I make Italian wedding soup, which has the tiny meatballs in it. That is a time consuming meal to prepare. So it was SO nice to have it all done and I only had to defrost the soup and make the macaroni.
I am thinking some lasagna, tator tot hotdish, baked spaghetti, and I should do some chicken pot pie. I don't really know what else I should make. I'll have a few pizzas in the freezer so if we need something in a snap we've got it. Hopefully we'll get a grill and we can do lots of food out on the grill...that's always easy.
I got some aluminum foil today and a few extra groceries. I think that tomorrow I might make some freezer meals! Yay!!! I need to get some things done soon because Harper will be here in a few weeks!
You know, my banana and zucchini bread always seem a little dry to me when I defrost them. How are you wrapping yours? Maybe I'm not preparing them for the freezer properly...
