We had a similar situation at our Cub Scout Mass.

I think what I would do in the future is either make sure the friend goes home

We have brought non-Catholic friends to church and we have let them know that they are not permitted to receive Communion because they are not Catholic.... never had a problem

I would have asked her to stay in the pew. I don't think she would have cared, and it would have avoided any possibility of problems. You probably didn't have enough time to fully explain what was going on, and she saw it as a piece of bread, so figured she might as well take one too.
