We say the "Now I lay me down to sleep.." prayer, but after my boys learned it, I discovered one that had a different ending. Instead of "If I die before I wake, I pray the Lord my Soul to take" this one ends with "See me safe through the night, and wake me with the morning light"
The boys would insist on saying both, but I only taught dd7 the second ending.
Then after they learn one prayer, we add another. It rounds out being the bedtime prayer, a Hail Mary, an Our Father, and a Glory Be. DD is heading for First Communion next year, and she needs to learn the rosary, so this is a good place to start.

May the road rise up to meet you.
May the wind be always at your back.
May the sun shine warm upon your face;
the rains fall soft upon your fields
and until we meet again,
may God hold you in the palm of His hand.

Like you, we started with the Guardian Angel prayer, then added the Our Father and the Hail Mary. My 4 year old likes to sing the Johnny Appleseed song as well. :-)

We also do "special prayers" -- whatever they'd like to pray about. Because my 4 year old now prays with the others who say all the prayers (and sometimes the Memorare to boot!) he hasn't picked up on the words as well. So lately I've been trying to pray with him alone, and sticking to one prayer per night.
