We had these at our seder last night, and they were quite good. Hope you enjoy!
Passover Popovers
Bring to boil: 2 cups water, 1 cup oil, 1/4 cup sugar, salt
Stir together: 1 cup potato starch, 1 cup matzo cake meal
Pour boiling mixture over dry ingredients and mix.
Beat in 12 eggs, 1 at a time
Grease 24 muffin cups well with vegetable shortening, such as Crisco. Fill.
Put in 475 degree oven and immediately drop temperature to 350 degrees.
Bake for 1 hour without peeking.
I haven't had these since I was a little girl! I love them! Maybe next year Jakie will have outgrown his egg allergy, and I'll be able to make them. Thanks for sharing the recipe.
