Veggie kugel - Low fat

I thought I'ld share this recipe, my family really likes it and it's good for anyone who is watching what they eat and cholesterol.

2 green squash
2 carrots
1 rib of celery
1 small sweet potatoe
1 small onion
1 small potatoe
1 OR 2 eggs (usually 1 is enough, depends how watery the mix is)
salt, pepper- to taste

Grate all the veggies and mix together. Add the egg and s&p. Bake at ~350F (180C) for ~45minutes. It usually stays a little crunchy but you can cook longer if you like it softer. Good hot or cold
