Busy Night Meals?

Ack, football practice starts next week!  Just when I was getting used to actually cooking meals every night, we go back to our crazy sports schedule.  I have such a hard time preparing healthy meals when I have to have kids at practice between 5-7.  Do you have any ideas or tips on feeding kids who have after school activities?

I love making Tortellini with red sauce. It only takes 5-7 mins to make. Add some french bread and/or salad and dinner is done! :smileyhappy: I also use my crock pot a lot in these situations. I love Crock Pot Lasagna or Ziti, sloppy joes and BBQ. I also like to batch cook...make pancakes, waffles, chicken and hamburger ahead of time. We usually freeze the pancakes & waffles to microwave later in the week. Hope this helps!

Good suggestions!  I really need to make better use of my crockpot.  I did make up a huge batch of taco chicken meat, when then I froze in small portions.  It's really good on quesadillas.  I've never tried lasagna or ziti in the crock pot, have any recipes you care to share?  I will make ziti and split it into 2 portions so I can freeze on for later.  I will freeze pancakes as well, they reheat pretty well.

I love my crock pot. I cook whole chickens in it and freeze the meat for many dinners. I also like to throw in a London Broil with potatoes and carrots for a quick & easy dinner. Great idea to make huge batches and splitting them into 2 meals!
