So we are trying for #2, and since I am planning this pregnancy I never knew how much information is out there until now! However, I havent been able to find some answers, and am hoping that you guys might know the answers?

First off, yes it is hard to temp when you have a job with a constantly changing schedule. However if you go on fertilityfriend.com I believe there is information somewhere about charting with shift work. Secondly I have heard of women with one or more children dx'd with PCOS later in life, but try not to worry about that just yet! You still have regular periods even though your cycles are long, which is a good sign you don't have PCOS. Women with PCOS tend to get only 2-3 periods per year.
As for tips on getting pregnant quick? I have none, seeing as how I've been TTC for over 2 years with no luck! Lol.

#1 - Thinking about temping ... My suggest would be to try and temp on the days you work and sleep and night.
