The most romantic thing my Dh has ever done... Well... let me think a minute...
....

This year, for Valentine's Day, Our church youth group was selling roses for a fund raiser.. And for once (He canNOT keep a secret!!).. he kept his mouth shut... and bought some..


He made NO indication that he'd even remembered what day it was.. and, of course, me being female and all.. I felt "let down" to say the least..
Well.. about 30 or 45 minutes after dh had left for work.. the doorbell rings.
My youngest DD answered the door. (I homeschool my dd's.. so they were getting ready for their day at that time.. and just happened to beat me to the door)..
She called to me and said it was for me... with a cute little smirk and dewy eyes..
(awwwww)
I got to the door.. and asked her who it was (I was still in my night gown because it was still pretty early!).. and by that time.. my youngest had gone and made her sister come watch (they had matching expressions, no less!)...
Well.. I open the door.. and see my Dh's face just above 2 dozen beautiful roses.. and him smiling with tears in his eyes... saying he loves me and that he was hoping I would have a good day.. and maybe the roses would lift my spirits some...


You need to know... this was after having 2 HORRID weeks! He'd been walking around like a big grizzly bear biting everyone's heads off for no reason and sicker than a dog! .. I was really pretty "frazzled" feeling by that morning when he left..
(and.. I admit.. I wasn't too understanding of his being such a pain in the butt while being so sick... *shame on me! :( *)


I just broke down and cried.. and gave him the HUGEST hug!..


I don't know if you'd call that romantic or not.. but at the time.. it sure was to me.
(I think it's one of the sweetest things he's done in a long time!)


There was another time.. When he proposed..


We had gone to pick up our rings (we'd discussed it quite a bit.. picked out rings, etc.. but he'd never actually proposed yet.. lol)... and was on the way to my parents' house to show them.. When.. just as we turned on to their street (with two vehicles.. one with a group of teen couples.. the other with a middle-aged couple) behind us... (he was driving..)... He suddenly stopped the car in the MIDDLE of the street.. not enough room for ANYONE to pass on either side.. even in a small vehicle.. And.. ignoring the honking and shouting.. He got out.. with this cute little boy grin.. ran around to my side of the car.. opened the door.. held out his hand to
"help" me stand... He kept holding my hand with one hand.. opened the box with the other.. while bending down (talented, huh.. lol).... then .. On bended knee.. in front of quite a few people.. proposed!... He had a huge grin... a nervous look in his eyes.. almost in tears... and all I could do was cry and say yes..


He kissed me amoungst cheers and cat calls from the teens... then got back in the car and drove on about 3 more houses.. right to my parents' driveway.. lol...


We sat there a few minutes.. kissing (naturally!).. and me saying "I can't BELIEVE you did that!"..

How did Dh and I meet?..


On a blind date! REALLY!


I was in Cosmetology school.. and Dh was in the military... And a childhood friend of mine just happened to start with the group just after my "basics"... I found out that she was engaged.. which was neat in a way. But.. both she and her fiance were feeling kinda weird because her guy's best friend (they were in the same unit.. and dorm.. and did everything together..) "just happened" to go with them just about everywhere they went.. mainly because he was new to the base and didn't know anyone yet.. SO.. her fiance asked my dh if he wanted to meet a girl so they could double date.. instead of my dh being a "third wheel".. lol.. He said.. he'd try it.. but wouldn't promise anything.
Well.. My friend told me the situation.. and asked me if I'd go along and meet him.
(I was going through a messy divorce at the time.. and didn't really want to meet anyone at the time... but.. ) I ended up calling Steve (my Dh).. and telling him the "conditions" I'd go. (don't expect anything at all.. only friendship... and I told him why).


WELL... Due to circumstances beyond my control.. they couldn't pick me up.. So.. they went to a Pizza Hut to wait for me. (Yep.. I drove myself.. )..
I walked in.. and was actually too embarrassed to really look at "steve" for quite a while. And.. embarrassingly enough.. he was a FLIRT! (he later said he has no idea what came over him.. because that's NOT his personality!)
Through the meal.. I "glanced" at him once.. and thought "omg! He's a DOG!"..
Then.. a second "glance".. and he winked at me.. which caught my eye.. then we both actually LOOKED at each others' faces.. and didn't really say another word until we were ready to leave! (that whole "silent" time.. I was thinking.. I'm going to marry this guy.. He's my future husband!.. he says he was just thinking "she's so cute" LOL!)
We ended up going out again (double dating with the same couple, too).. the very next week. We had a BLAST!.. and were totally inseperable after that day!~


This was in February, 1990. He offically proposed in May.. and we were married August 1, 1990... literally just minutes (11:47am)

The last book I read (am still reading).. is one of my training books... (doula research).. which I read and re-read quite a bit.. to keep the info "handy" in my mind.. lol..


I LIKE to read Christian romance, historical romance, and a variety of others (like recipe books, .. always looking for new recipes.. books on nutrition..and medical books.. yep.. I'm "a strange one".. lol!)


I don't think I really have a favorite... (not "typical" books, that is.. )

My favorite kind of food... I'd have to say is chicken!.. and.. Southwest-style (southwest TEXAS style, that is! lol!)

My favorite dish.. a home-made recipe for Chicken Fajitas..
(I'll even share the recipe... )

It uses one 2 1/2 lb bag of Tyson Chicken strips, 2 packets of McCormick's Fajita Seasoning (IGNORE the directions on back!), 2 tbs olive oil, 2 tbs white vinegar, 1/4 cup water, and one red (purple) onion and one red bell pepper.
(we also use fat-free flour tortillas)

Mix the 2 packets of seasoning (it IS brand specific), olive oil (doesn't taste "right" with any other kind of oil), vinegar and water. Add this marinade to the thawed, rinsed and drained chicken strips. Marinade (at room temp) for 30 minutes (NO LESS). While it's marinading.. cut the onion and bell pepper into strips. After the 30 minutes are up.. On a LARGE cookie sheet (with one-inch sides),..(hold each piece up so that the marinade drips off.. don't use any liquids in the pan (they will stay moist!.. and you CAN spray the cookie sheet with cooking spray).. Place the chicken strips side-by-side (should get two rows.. and chicken should be very close together on each row).. Then place the onion and bell pepper strips on top of the chicken.


Bake in 350* oven for 45 to 60 minutes (or until chicken is done).
Serve with warm tortillas. (can place tortillas in microwave.. individually, for 20 to 30 seconds.. then fill with meat and vegies).
