Before DH and I got married his mother made it crystal clear that she had her own life and was not to be considered our child care, she was not our baby sitter.

Devils advocate here...I think it's possible MIL had a picture in her head - perhaps based on the experiences of some of her friends - of being that grandmother whose whole life was devoted to watching the grandkids, tying them down from experiencing retirement. And she couldn't picture enjoying that and so that's why she made the comment she did.
But now Robert is here...she is enamored just like a normal person would be...and her tune is changing. It may just be a honeymoon phase and she will get over it. But as long as this is her idea I'd try not to be too upset about it.
As for DH, as long as he is the one in control of the routine for Robert - the one you two have agreed to - I think this early on help is ok. If she starts dictating the routine, then I'd have a problem with it.
It's harder for the stay at home men. DH has been doing this full-time for 7 years. He used to tell me how he needed a shirt saying "I'm happily married and not trying to pick you up" so that women would stop acting like he was trying to get their number when just starting a casual conversation at the bookstore. Or the time he took Aaron into the mens room to change his diaper and a complete stranger made a comment about him doing woman's work. The world IS changing...but it's slow.
