BTDT - Making baby food

I have been making most of Simon's solids. We have done mostly cereal and veggies. He has done a really good job with his veggies so I thought I would start adding in some apple sauce to his morning oatmeal/rice. I got one jar from the store to try out but I want to make my own.
What kind of apple should I use? I'm guessing nothing to tart. Any recomendations?
What is the best way to cook them? I have just been microwaving the veggies. Should I bake them?
See i like to eat granny smith apples. lol
I was curious about boiling cause they say not to do that with the veggies cause the good stuff leaches out.

Well, you don't drain them, so all the good stuff stays in the water that you cook them in. Just don't add too much water, just enough to cover them I think. Here's a recipe:

See everything I have read says that microwaving is just fine. Or thats what both of the books I have say. We don't have a steamer or the insert for a pot of water. I have so many kitchen gagets now I'm not sure DH would let me get another one. lol Cause technically microwaving with a little water is steaming them.

Here's an article about it: http://www.nytimes.com/2006/10/17/health/17real.html
Basically, some foods are not that affected by microwaving, but vegetables lose most of their nutrients: "One study published in The Journal of the Science of Food and Agriculture in 2003 found that broccoli cooked by microwave — and immersed in water — loses about 74 percent to 97 percent of its antioxidants. When steamed or cooked without water, the broccoli retained most of its nutrients."
Anyway, you don't need a special pan to steam stuff. We just boil water in a regular pan and then put our steamer over it. We have a bamboo one like this: http://www.walmart.com/ip/Ekco-PAO-10-Bamboo-Steamer/5855168
Cheap and easy to use. And worth having beyond baby food, IMO. We steam greens, asparagus, all kinds of things. It is THE healthiest way to cook food, so it's definitely worth it.
Here's a great article about the best ways to cook foods for a baby:

And here's a great article about how different cooking methods affect the nutritive value of foods.
