With Easter just a few days away, I thought it would be fun to share some of our favorite recipes. This is the first holiday I'm cooking (my parents are coming over so I'm only cooking for 4 adults) and I plan to go to the butcher to buy a nice roast and then figure out what to cook along with it!

I have a carrot cake recipe that is so moist, delicious, and good for you! I got it from Food Network a few years ago and have been making it every Easter (my mom demands I make it, lol!) Good thing I printed a hard copy back then because I just logged into my recipe box and the link no longer works. Attached is a pdf copy. :-)

Erica - That is so cool that your wedding cake was part carrot cake! I'm not a fan of beets but your recipe sure sounds easy. :-)

Ooh...I adore carrot cake. My wedding cake was even part carrot cake! Thank you for sharing.

My mom and my mother-in-law will be making Easter dinner (we have to eat twice). On my side, we always have ham, mashed potatoes, and lots of other side dishes that change from year to year. I love this super easy pickled beet salad:

two jars of pickled beets - diced
three hard boiled eggs - diced
1/4 to 1/3 cup of mayonnaise(NOT Miracle Whip)

Stir everything together. Season with salt and pepper. Chill.

This is the first year we're doing something special for Easter dinner. It's just me, DH, and Evan, so I won't be going all-out. I'm making a turkey, stuffing, and broccoli salad. I'm going to make lemon bars for desert.
