Leona--I made something similar this week, too, and I didn't put any hot sauce in at all--just a little salt and pepper and the cumin. So maybe that would work better for you!

Here's a couple of different recipes--I like using different kinds of beans though--these two both just use black beans.

One of these has the awesome idea of using frozen corn--it will keep the dish cold for longer if you make it right before you leave.

I use ground turkey instead of beef. The original recipe I have (off of a can of diced tomatoes) doesn't include the corn or black beans. It also just has a can of diced tomatoes and a 7oz can of diced green chilies. You can make it ahead, and heat it at your mom's. (as a side note, I make this and freeze it in loaf pans to reheat for an easy dinner)

I had something like this yesterday, and it was delicious!

How about a bean and corn salad? There are tons of super easy recipes like:

-A can of corn
-Can of black beans
-Can of red beans
-Can of chickpeas
-Can of any other beans you might like
-One onion diced
-One red pepper (or another color) diced
-Olive oil
-Red wine vinegar
-Salt, pepper, etc.

I have seen tons of recipes like this and they are always super good, especially with tortilla chips. Mmm, I want some right now, LOL. I think it is pretty flexible--you could add soybeans, soy sauce, chopped garlic, different spices--whatever you like.

Anyway, this would definitely make it through a hot day with no issues as long as you don't add any meat or dairy to it.
