Vacation dilemma

DH had was supposed to take his vacations last january. Since I was due those days, he chose to leave them for the future... And then when he wanted to take them (around april), he couldn't because he was swamped with critical stuff at work.
Now his boss told him he can have some days at the end of july. But we really don't know where to go or what to do...
First, it's the end of july... winter here, so any "water oriented" place is out of the question.
Second, we have a six month old baby, so, some other fun stuff (like extreme sports) are also out of the question....
I get that DH desperately NEEDS some rest, but I refuse to be locked in some cabin, with the baby and him... I mean, I love them, but I already do that all the time!!!! So a quiet vacation in the middle of nowhere in a cozy cabin is also a big "no".

I'm out of ideas.... And you??

Ah, tough one... maybe don't count waterside places out just because it's winter? I quite like to go to the seaside "off season" as it's so much quieter; and I like walks by the rough sea and then retreating somewhere cosy for a nice cuppa tea.

But then, as you're not keen on being cooped up with just you, DH and Fede, maybe not?!

The only other thing I can think of is a city break; somewhere you haven't been before and where you can do reasonably child friendly cultural things (museums, churches) and have lots of cafes and restaurants to try.

I agree w/ Anna... try some new city side things. Check out a new town or city... spend a few nights in a hotel, check out museums, ice skating, local sports, etc.

Is flying somewhere warmer out of the question? You would have a lot more options, then!

Thanks for the advice girls. After some talking, we decided to go in a "city vacation".
We are going to a nearby town, that it's not very "exciting" per se, but it's near, so the trip shouldn't be so hard on fede. Plus the hotel has a spa, with an indoor pool and massages and such... (which sounds perfect for my tired mommy body). And there are sme natural sights too.
I'm not super excited, but I'm confident we'll have a nice time.

this is the hotel:
