1/4 large celery stalk
1 Tbsp. fresh shredded carrots
2 medium-size fresh tomatoes
4 oz. grilled, boneless chicken breast
2 Tbsp. mayonnaise, egg-free, low fat or nonfat
Rinse tomatoes and celery; dice celery. Cut off top of tomatoes and, with a tablespoon, scoop out pulp, leaving about 1/4 inch thickness to form shell.
Chop or shred chicken breast and mix together with celery, grated carrot and mayonnaise until well combined. Stuff tomatoes evenly with chicken mixture and serve.
