I just got a booklet from my local grocery store with Thanksgiving recipes in it and this one caught my eye. It's a new twist on green bean casserole, without the canned cream of mushroom soup.
Sauteed Green Beans With Caramelized Onions
To make this flavorful, low-fat dish, boil green beans until crisp-tender, about 4 minutes. Run them under cold water and set aside. In a saute pan, cook a thinkly sliced onion in a bit of olive oil and butter, salt and peper, thyme and a pinch of sugar over low heat until the onions begin to brown. Stir occasionally as they caramelize to avoid burning. Stir in beans until heated through. If you like, stir in porcini mushrooms and garnish with slivers of toasted almond.
