Holiday Cranberry Pork Roast
2-1/2 lb boneless pork loin roast
16-oz can jellied cranberry sauce
1/2 c cranberry juice cocktail
1/2 c sugar
1 tsp dry mustard
1/4 tsp ground cloves
2 TB cornstarch
2 TB cold water
1 tsp salt
Place pork in 5-qt slow cooker. Stir together cranberry sauce and next 4 ingredients. Pour cranberry mixture over pork. Cover and cook on HIGH setting one hr; reduce heat to LOW setting and cook 4.5 hrs or until pork is tender.
Skim fat from drippings in slow cooker. Measure drippings o equal 2 cups, adding water if necessary. Pour drippings into med saucepan; bring to boil over med high heat. Stir together cornstarch and cold water until smooth; add to drippings and cook over med high heat, stirring constantly, 2-3 mins
or till thickened. Stir in salt. Serve gravy w/sliced pork. Serves 4-6
Note: Don't remove the slow-cooker lid unless you're stirring or checking for doneness. Every time the cover comes off you lose heat that's equal to 20-30 mins of cooking time .. so trust the recipe.
