Our son moved out July 4th. Got a place with his cousin who is in his 30's. So they take care of themselves. Now that it's just dh and I. I can make the food stretch really far. Now I only need to make enough for 2 portions each meal. A package of meat might make 2 meals. Examples. I got some diced raw chicken at the Mexican market. Last night we had Greek lemon chicken and rice casserole. That I threw some spinach in. The other half of that chicken will be on a cob salad on Monday. Todays hamburger meat will be burgers tonight. Then on Tuesday will be salesbury steak. I got a package of boneless center cut pork chops. There were 6 chops. I divided it up for 3 meals. Since the chops are fairly thick. We'll each eat 1. I been buying meat in bulk when on sale. I been portioning meat in Food Saver bags or containers to be enough just for 2 of us. So I just pull out one package and know it's just enough for that day. Sometimes I might cook more to have leftovers for freezing. For on days I don't have time to cook. Then I just heat my leftovers in the microwave. Usually it's soup or chili I make lots of. That freezes well. I am so used to cooking big. Because it's how I've done it on the job in the past. I got to start thinking smaller.
