ROASTED PORK WITH PEPPER PESTO
2 cloves garlic, minced
4 tbs olive oil
1 tsp paprika
3 cloves garlic, cut into thin slivers
3 large red bell peppers, cut into wedges
1 pound pork tenderloin
2 tbs snipped oregano
Heat oven to 425 degrees. In a bowl, combine slivered garlic, oregano, paprika, salt and pepper. Brush pork with 1 tbs oil, press garlic mixture onto all sides. Place on a rack in a roasting pan. Roast uncovered 30 min. or until done. Cover with foil, let stand 5 min. Heat a skillet. Add pepper wedges.
Cook until peppers are browned. Remove from heat. Transfer a third of the peppers to a blender. Add minced garlic and remaining oil. Process until almost smooth and a pesto like consistency. Season to taste with salt and pepper. Serve pork with pepper pesto and roasted pepper wedges. Sprinkle with oregano...Makes 4 servings.
