At the campground this weekend, my kids and I had a ton of fresh veggies, a pork loin, charcoal, an oven in the cabin, cookware, and NO SALT OR PEPPER. My kids grew up in my restaurants, so they were all over this too; they called out for someone to bring some Tony Chachere's seasoning. I said, "No, that won't get it...entirely!" My daughter got very creative and went outside to ask other campers if they could spare a little salt and pepper; she came back with two teacups with a few tsp of each for table seasoning, but I had already seasoned our vegetable packets (in foil on the grill) with...(drum roll)...crumbled raw spicy breakfast sausage! I pointed out the benefits (keep in mind, we were camping, nearest pantry was 11 miles away in a grocery store) of seasoning with sausage: salt, pepper, fennel, sage, garlic, onion, smoke...OMG, it was GOOD! The kids were on board with me.
Our campfire menu: Pork loin studded with garlic, bell pepper, onions; seasoned with Tony's. Mac and cheese for the toddlers, of course. Veggie packets: mushrooms, zucchini, yellow squash, onions, asparagus, peppers, and a few things I don't recall. With the sausage crumbled in, and I made some really awesome hollandaise sauce, the meal was fit for ...screw the king, it was fit for my family!
I love camping meals. Sometimes they call for great creativity.
