1/2 lb. mushrooms, chopped
1/2 cup chopped onion (1 medium)
3 T. margarine
1 t. salt
4 cups hot seasoned mashed potatoes
1 T. chopped parsley
Sauté mushrooms and onion in margarine about 8 minutes or until tender. Add salt and pepper. Stir into mashed potatoes. Serve, sprinkle with parsley.
