3 pkg. refrigerated mashed potatoes, 20 oz. each
3/4 cup whipping cream
3/4 cup shredded Gruyere, Havarti, or American cheese (3 oz)
Fresh cracked black pepper
Preheat oven to 300. Spoon potatoes into a 2 quart casserole. Bake, covered, for 50 minutes. Meanwhile, in medium mixing bowl, beat cream in medium speed of mixer to soft peaks. Fold in cheese. Remove potatoes from oven. Increase temperature to 375. Uncover potatoes. With large spoon, make a hole in the center of the potatoes by pushing from the center to the sides. Spoon the whipping cream mixture into the hole. Sprinkle top with cracked pepper. Bake, uncovered for 15 to 20 minutes more or until top is golden. makes 10 servings.
