Sweet Onion and Zucchini Bake
1/4 cup butter
3 cups sweet onion, thinly sliced
3 cups zucchini, thinly sliced
2 eggs, beaten
1/4 cup half and half
1 t. salt
1/8 t. pepper
1/4 t. dry mustard
1 cup Swiss cheese, shredded and divided
Melt butter in a large skillet over medium heat; sauté onion and zucchini until tender. Arrange vegetables in a lightly greased 8 x 8" baking pan. Mix eggs, half-and-half, salt, pepper, mustard and 1/2 cup cheese. Pour egg mixture over vegetables; sprinkle with remaining cheese. Bake at 375° for 20 minutes, or until center is set. Makes 6 to 8 servings
