I'm a southern native, yet I have never been real good at cooking peas!
But for Xmas, I said I'd bring a bunch of mostly lady peas ----
I plan to include some ham seasoning -
I understand I should bring them to a boil, just for about 3 min -
then cover & let em cook (on simmer) to about 45 min.
Does this sound correct?
Also - Could I cook em THE DAY BEFORE???? or must they really be that same day?
