Bright green caramel sauce may not be what any grown-up is looking for on St. Patrick’s Day, but kids will think that this green caramel sauce rocks. Serve over vanilla ice cream.
|1/2 cup butter||1/2 cup heavy cream|
|1 cup light brown sugar||2 tsp. vanilla|
|1 Tbsp. water||Green food coloring|
|1/4 tsp. salt|
In a large heavy saucepan over medium heat, melt the butter and add the brown sugar, water and salt. Bring to a boil, stirring all the time.
Reduce heat and let the caramel bubble gently for 5 minutes, to thicken.
Turn off the heat and stir in the cream and vanilla. Add a few drops food coloring, stirring until it achieves a shade you like. Eat warm or cold over ice cream. Store in an airtight jar in the refrigerator for up to 2 weeks.
