Fun Summer Salads

These four are sure to surprise and please with their unique color and flavor combinations. And don't worry, they're also very easy to prepare -- so you'll have plenty of time left to enjoy them.


Southwestern Sweet Potato Salad
Serves 3-4 An innovative and delicious salad that is wonderful with chicken, pork or duck.

  • 1 1/2 pounds sweet potatoes, peeled and cooked
  • 2 tablespoons canned green chilies, peeled and chopped
  • 1/2 cup chopped red pepper
  • 2 tablespoons chopped cilantro
  • 1/3 cup mayonnaise (low-fat is fine)

In a bowl, combine ingredients and keep chilled until ready to serve.

Blueberry Salad
Serves 3-4 Don't be put off by the unusual ingredients, this salad is absolutely delicious! It's goes especially well with poultry.

  • 2 cups fresh blueberries
  • 2 3/4 cups halved cherry tomatoes
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar

In a bowl, combine ingredients and keep chilled until ready to serve.

Macaroni and Cheese Salad
Serves 4 A new twist on two perennial favorites!

  • 1 pound macaroni noodles, cooked and drained
  • 1/2 cup peas
  • 1 cup shredded low-fat cheddar cheese
  • 1 cup diced yellow pepper
  • 2 teaspoons Dijon mustard
  • 1 cup mayo (low-fat is fine)

Combine ingredients in a bowl and keep chilled until ready to serve. For a creamier consistency, you can add 1/3 cup low-fat milk.

Green Beans with Julienned Beets
Serves 1-2 A delicious salad that can be easily prepared with canned beets.

  • 1/2 pound cooked green beans
  • 1 cup julienned beets
  • 2 tablespoons olive oil
  • 1 tablespoon raspberry vinegar
  • 1/2 teaspoon fresh thyme leaves

Mix ingredients together and keep chilled until ready to serve.
