|1 tablespoon vegetable oil||2 pounds fresh Broccolini|
|1/2 teaspoon crushed red pepper||1/2 teaspoon salt|
|1 teaspoon minced garlic||1/2 cup chicken broth|
In a large skillet over medium heat, heat oil. Add pepper and garlic, and cook, stirring constantly, for 1 minute. Add Broccolini and salt, and cook, stirring constantly, for 2 minutes. Stir in broth. Reduce heat to low. Cover, and cook for 10 minutes, or until tender.
You may find Broccolini labeled as “baby broccoli” in the produce section, but it’s actually a cross between traditional broccoli and Chinese kale.
