Hearty and filling, steel-cut oats can take a while to make, but not when you prep them ahead of time. Start the night before and it’ll reduce the cooking time by half in the morning.

| 1 cup uncooked steel-cut oatmeal | Pinch salt | |
| 4 cups water | 1/2 teaspoon vanilla |
Prepare in advance: In a medium saucepan, bring the oatmeal and water to a boil. Cool and cover. Transfer the pot to the refrigerator and allow the oats to soak overnight.
Remove the pot from the refrigerator and cook the oatmeal on low for 10 minutes, stirring occasionally. Turn off the heat and stir in the vanilla.
Serve with fruit, maple syrup, or brown sugar.
