Stop talking turkey and instead opt for a meatless Thanksgiving. With so many vegetarian options you won’t even miss the big bird. A few ideas to get you started:

Main course: Try an alternative protein such as tofu. A variety of shapes, textures and flavors can be bought online or at your local store. Some examples include Tofu Turkey, Tofu Mock Turkey Loaf and Oven-baked Marinated Tempeh.
Stuffing: Instead of stuffing a bird, stuff a squash or cook your stuffing in a Crock-Pot.
Gravy: Smother your mashed potatoes in vegetarian gravy. Cashews, mushrooms and shallots are all excellent substitutes for turkey flavor.
