| one 10.1 oz (283 g) tube refrigerated croissant dough | salt and freshly ground black pepper | |
| 2 tbsp whole-grain mustard | 6 slices cooked ham | |
| 1 tsp honey | 1 egg yolk, beaten with 1 tsp water, to glaze |
Preheat the oven to 400°F (200°C). Lightly butter a baking sheet. Unroll the croissant dough and separate the triangles.
Mix the mustard and honey together in a small bowl, and season with salt and pepper. Spread over one side of each triangle.
Place a slice of ham over each triangle. Don’t worry too much if it doesn’t fit the triangle, as the dough will expand during baking. Roll up each triangle, from its wide side up towards the point.
Arrange the triangles point side down, on the baking sheet, spacing them well apart. Brush the tops with the yolk mixture.
Bake for 10–12 minutes, or until the croissants are puffed up and golden. Serve immediately.
