New Fashioned Meat Loaf
Though it's very low in fat, this is one of my all-time favorite meat loaves. The tanginess of the horseradish coupled with the ketchup makes it unique. Made with veal or beef, it's extremely moist, even compared to full-fat meat loaf. Though I don't like many low-carb ketchups, I use Heinz One Carb Ketchup here, which many of my testers claimed to enjoy even more than traditional ketchup.

Sweet and Spicy Pork Tenderloin
When people hear that I'm a "healthy chef," they often assume I'm a vegetarian, which, to anyone who knows me, is a ridiculous notion. I love meat . . . all kinds really, but this pork roast is of my favorites. In fact, my friend Marjorie and I made this roast one night and we loved it so much we wanted to eat the whole thing. When cooked right, this is as tender as can be.

Cheesy Eggplant Lasagna
Though Amanda Carlson confessed to me that it's actually her husband who makes this recipe, it's one of her all-time favorites. She swears that "it tastes sinful even though it's low in calories." Amanda's husband also sometimes adds cooked Jennie-O Turkey Store Extra Lean Ground Turkey and Italian seasonings, which he layers in after the mushrooms.
