Looking for a simple, stove-free dinner alternative? Try these Asian-style lettuce cups packed with tasty goodies including red pepper, carrot, cilantro, mint, crushed peanuts, hoisin sauce, ginger and crumbled tofu.

| 2 cups firm tofu, crumbled | 1/4 cup mint, cleaned and chopped | |
| 1 red pepper, seeded and diced | 1/2 cup peanuts, crushed | |
| 1 carrot, grated | 1/2 cup hoisin sauce | |
| 1/2 small red onion, minced | 1/2 teaspoon fresh ginger, peeled and grated | |
| 2 green onions, sliced | 1/2 teaspoon Sriracha hot chili sauce (optional) | |
| 1/4 cup cilantro, cleaned and chopped | 1 head Boston (or Bibb) lettuce, washed and dried |
Place all ingredients except for lettuce into a bowl and combine well.
Spoon mixture into lettuce cups and serve.
