    Ingredients

    2 cups firm tofu, crumbled 1/4 cup mint, cleaned and chopped
    1 red pepper, seeded and diced 1/2 cup peanuts, crushed
    1 carrot, grated 1/2 cup hoisin sauce
    1/2 small red onion, minced 1/2 teaspoon fresh ginger, peeled and grated
    2 green onions, sliced 1/2 teaspoon Sriracha hot chili sauce (optional)
    1/4 cup cilantro, cleaned and chopped 1 head Boston (or Bibb) lettuce, washed and dried
