Homemade Brownie Mix

Store-bought brownie mix is handy but nothing special. Worse, many brands have a faint chemical aftertaste. On the other hand, homemade, preservative-free brownie mix is a wonderful gift. Give a loved one a jar or bag of brownie mix with an instruction label: “Mix with 4 eggs and 1 stick melted butter, and bake in a greased 8 x 8 pan for 20-25 minutes.” You can even personalize each person’s mix with any add-ins they like: 1/2 cup of white chocolate, dried cherries, chopped walnuts, flaked coconut, bits of caramel. Add up to 1 1/2 cups of extras and you’ll get the best brownies ever -- no commercial mix needed. This recipe can be easily doubled, tripled or quadrupled.
