The book includes a whopping fifty-nine apple varieties with descriptions of their flavor, history and how best to use them in the kitchen. Traverso says, “When you begin tasting them and realizing how varied and food-friendly they are, it becomes addictive! I keep saying that I think I could write a second apple cookbook with entirely new material.”
