The easiest way is not to worry about it. In general, small and medium shrimp do not need de-veining except for cosmetic purposes. In larger shrimp, sometimes the intestinal vein contains grit; then you should prefer to remove it. There is a special tool (de-veiner gadget), although I am a firm believer in not having to buy too many special gadgets. Start at the top of the prawn (away from tail) and open it up a little, and many times the vein can be pulled out. Or run the tip of a sharp knife where the vein is and then remove.
